Grilled Corn, Mango & Black Bean Salad
To open your Solar Plexus Chakra eating yellow foods is encouraged. Enjoy this nice salad to stay cool on a hot summer day. The corn and mango are vibrantly yellow and beans naturally soothe digestive issues which is where blockages to the Solar Plexus can lie. The avocado will add healthy fats and nutrients, making this a protein-packed and nutritious salad.
Ingredients | Quantity | Directions |
---|---|---|
Mangos | 2 (ripe but firm) | Grill ear of corn, slice corn and set aside to cool |
Black Beans | 15 oz can | Peel and dice the mango and jicama |
Jicama | 1 1/2 cups | Rinse the black beans |
Cilantro (chopped) | 1/4 cups | Add beans, mangos, corn and jicama together in an bowl |
Fresh Lime Juice | 1 lime | Season with salt & pepper |
Lime Zest | 1 lime | Combine zest, juice, EVOO, salt & papper in a mason jar |
EVOO | 3 tbsp | Shake well to combine |
Avocado (sliced) | 2 | Drizzle mixture over salad and gently toss |
Salt | to taste | Top with avocado and cilantro |
Pepper | to taste | Enjoy! |
